Sainte Cécile - our inspiration
As Patron Saint of Music, it was clear that Cécile’s vintages should honour her musical origins. Hence the “Notes” and “Sonatina” cuvées.
All our wines are harvested, vinified, aged and blended with the same care and attention to detail. We do everything within our power to bring out and enhance the personality of each wine.

White Wine
Notes Pures
This cuvée will not leave you indifferent. Crafted from low-yielding Sauvignon Blanc and Sauvignon Gris grapes, it has been partly fermented and aged in oak casks for 6 months. The structure of this wine is well-suited to ageing in oak, which adds vanilla and toasty nuances that integrate beautifully with the wine’s intrinsic aromatics of lemon, pear and white flowers. Fresh minerality.

Notes Franches
We are proud to introduce our low-yielding Cabernet Franc and Merlot grapes, hand-picked at full maturity, in this delicious new cuvée. The initial bouquet presents authentic aromas of rich red berry fruit and savoury wild herbs, leading to distinctive flavours of brambly blackberry, raspberry, cedar and delicate flowers.

Red Wines
Notes d’Orphée
The dominant Syrah grape expresses its full personality in this blend, warmed by the hot sun of the Midi, gently refreshed by the summer breezes on the hillside terraces. Vinified in natural cement and partly aged for 12 months in oak, the initial bouquet presents notes of blackcurrants, pepper and just a touch of grilled toast. This builds into a voluptuous symphony of red fruit, liquorice and black olives, with a definite touch of terroir.

Sonatina
This is the icon wine of the estate, made from our old Syrah and Cinsault vines and aged in 1st and 2nd wine oak barrels for 12 months. Sonatina’s opulent texture offers an expressive palette of ripe blackberries, blackcurrants, figs, black pepper, liquorice and coffee. It is a powerful and age-worthy wine, to be enjoyed immediately but will evolve gracefully over the next 4-8 years.
